Achma from lavash with cottage cheese
Thin lavash is always useful in baking that requires many layers of dough, it will save time on kneading and rolling it out. Prepare a simple version of achma - Georgian multi-layered pie - with cottage cheese and cilantro. To ensure that the lavash is well steamed in the oven and becomes soft, soak it in a mixture of kefir and egg, and also add melted butter to each layer of filling.

Wash the cilantro and pat dry. Prepare bowls and a deep rectangular baking dish.

Seasoning the Cottage Cheese Mixture
Place the cottage cheese in a bowl, add ¼ tsp salt and black pepper.

Separate the coriander leaves from the stems, chop them finely and add to the cottage cheese. Mix everything well.If you don't like cilantro, use dill or parsley.

Preparing the Kefir and Egg Mixture
Break an egg into another bowl, pour in the kefir. Add ¼ teaspoon of salt and mix everything thoroughly.

Place the butter in a microwave-safe bowl and melt until liquid.

Preparing the Baking Pan with Lavash and Greasing
Grease a baking pan with 0.5 tsp of butter. Place one sheet of lavash in the pan so that it completely covers the bottom and walls, and the edges hang freely on both sides. Grease the part of the lavash lying on the bottom with the egg-kefir mixture.

Place ⅓ of the curd mass on the lavash. Smooth it out and grease it with 0.5 tsp of melted butter.

Adding Lavash and Cottage Cheese
Cover the cottage cheese layer in the mold with a second sheet of lavash so that its free edges also hang down. Spread the second lavash with the egg-kefir mixture. Repeat the layers of cottage cheese, lavash, and kefir-egg mixture twice until the achma is covered with the top layer of lavash.

Oven Time and Cooling
Preheat the oven to 180 °C. Place the form with the dough in it and bake for 15-20 minutes until golden brown. Take the pie out and let it cool down a little. Turn the cooled achma over and cut into portions.
