Cheesecakes with cranberries
There are no eggs in the cranberry syrniki and not too much sugar, which only balances the sourness of the cottage cheese and berries. The curd mass is mixed quickly, it is easy to mold the desired shape from it. To prevent the syrniki from falling apart when frying, and the berries from bursting from the heat, cook them over high heat until a firm crust forms. Both fresh and frozen cranberries will do, which should be kept in warm water for 5 minutes.

GETTING READY

Wash the cranberries, lay them on a towel to dry. Prepare a bowl and a frying pan.

Place the cottage cheese in a bowl, add sugar and 1 tbsp flour. Mix thoroughly until smooth.

Place cranberries into the curd mixture and stir carefully so as not to damage the berries.

Place 1 tbsp of flour on a flat plate. Divide the curd mass into 4 parts, roll each into a ball and roll in flour. Flatten the balls with your palms to form a puck.

Pour vegetable oil into a frying pan and heat it over high heat. Place the formed syrniki into the hot oil and fry them until they are thickly browned for 2-3 minutes. Turn them over and fry the other side for another 2-3 minutes.Line a dessert plate with paper towels and place the fried syrniki on them. Wait until the paper absorbs the excess oil and carefully remove it from the plate.

Serve the cheesecakes with cranberries with Jerusalem artichoke syrup and sprinkle with powdered sugar. Garnish with mint and berries.
