Chicken cutlets with pumpkin
Thanks to the pumpkin, the chopped chicken fillet in the cutlets will be filled with juice, soften and acquire an appetizing color. Such cutlets will become even tastier and more interesting if you add canned corn and green onions to the mince. You can do without a side dish or serve, for example, dietary bulgur or quinoa. To reduce the number of calories, replace sour cream with natural yogurt and do not fry the cutlets in oil, but bake them in the oven.

Preparing Ingredients
Wash the chicken fillet and pumpkin. Peel the pumpkin and remove the fibrous core with seeds. Rinse the green onions. Prepare a grater, a bowl, and a frying pan with a lid.

Cut the chicken fillet into cubes with a side no larger than 3-4 mm. Put them in a bowl. Finely grate the pumpkin into the same bowl and break the egg.

Flavoring the Mixture
Cut the green onions into thin rings and add them to the bowl with the chicken and pumpkin. Add salt, chicken seasoning mix, dried garlic and kelp.

Mixing the Ingredients
Place corn and sour cream in a bowl with the combined ingredients, add breadcrumbs. Knead into a smooth soft mince.

Shaping and Frying
Pour vegetable oil into a frying pan and heat it over medium heat. Form the minced meat into 6 round patties with a diameter of about 4 cm. Place them in the frying pan and fry for 3-4 minutes until golden brown.

Turn the cutlets over and fry them on the other side for 3-4 minutes. Boil 0.5 cups of water, and pour it over the cutlets. Reduce the heat under the frying pan to low and simmer the cutlets under the lid for 6-7 minutes.
