You don’t even need to add a side dish to these cutlets; just serve them with a light sauce based on sour cream or Greek yogurt.

Ingredients for the recipe
  • 3 pcs Zucchini (300 g)
  • Ground turkey (300 g)
  • 1 pc Chicken egg (60 g)
  • 1 bunch Dill (15 g)
  • Cheese (80 g)
  • Rice flour (100 g)
  • 1 tbsp Salt (10 g)
  • 0.5 tbsp Mix of peppers (1.5 g)
  • 2 tbsp Vegetable oil (29 ml)

  1. Prep Your Zucchini and MincePrep Your Zucchini and Mince
    Wash and clean the zucchini. Remove the seeds from the core. Defrost the mince. Wash the dill. Prepare a deep bowl, a grater, and a frying pan.
    Defrost the minced meat on the bottom shelf of the refrigerator.

  3. Grate, Season, and Squeeze Out the Juice
    Grate the zucchini on a fine grater. Salt and mix. Leave for 5 minutes, then squeeze out the released juice.

    Mix the minced meat, zucchini, and chicken egg in a bowl.
    Add chopped carrots and onions to the mince. Replace the ground turkey with ground chicken, pork, beef or mixed ground meat.

    Finely chop the dill. Put it into the mince. Pepper. Mix.
     
    Add more fresh or dried herbs to the minced meat: parsley, green onions, cilantro.

    Add rice flour to the minced meat. Mix well so that the flour is evenly distributed.
    Replace rice flour with wheat flour, bread crumbs or semolina.

  11. Forming Cutlets with a Cheese Surprise!
    Grate the cheese on a medium grater. Take some minced meat in your hand and form a flat cake on your palm. Put some cheese in the center of the flat cake and cover it with another portion of minced meat. Form a smooth cutlet.
    Roll the cutlets in breadcrumbs, flour or semolina so that a crust forms on them during frying.

    Heat vegetable oil in a frying pan. Fry the cutlets for 7-8 minutes on each side over medium heat under a lid.
