Can't decide between pancakes and an omelette for breakfast? Make pancakes with a fluffy filling of beaten and lightly fried eggs. Milk-cheese sauce and crispy bacon will add a special taste and even more nutrition. If desired, replace it with ham, fried onions, tomatoes or fresh herbs.

  • 2 cups Milk 2.5% fat (400 g)

  • 6 pcs Chicken egg (360 g)
  • Smoked Turkey (35 g)
  • Semi-hard cheese (50 g)
  • 0.5 tsp Salt (5 g)
  • Ground black pepper (1 g)
  • 2 tsp Refined sunflower oil (10 g)

    Take all ingredients out of the refrigerator in advance so that they warm up to room temperature. Sift the flour. Prepare bowls, a grater, a mixer, a saucepan, and a frying pan.

    Melt the butter on the stove or in the microwave. Let the butter cool. Set aside 1 tbsp. flour for the sauce. Add ¼ tsp. salt to the bowl with the remaining flour, pour in 1.5 cups of milk and ⅔ of the melted butter and break 2 eggs into it. Knead a homogeneous pancake batter with a mixer. Leave it at room temperature for 30 minutes.

    Finely grate the cheese. Cut the smoked turkey into slices. Heat a dry frying pan over low heat, fry the smoked turkey in it, stirring, for 2-3 minutes, until crispy. Transfer the smoked turkey to a bowl, wash, and wipe the pan dry.

    Break 4 eggs into a clean bowl, separate 2 whites into a deep container. Beat the whites with a mixer until fluffy peaks form. Add ¼ tsp. of salt and black pepper to the remaining eggs in the bowl, beat with a whisk until a homogeneous light mass is formed. Combine it with the beaten whites and stir with a spoon. Heat the pan again, where the pancakes were fried, and pour the egg mixture into it. Fry it, stirring, until the eggs begin to harden.

    Set aside ⅓ of the fried smoked turkey for decoration. Place the pancake on a board, sprinkle it with a little of the remaining smoked turkey, put 2-3 teaspoons of omelet, and pour over the milk-cheese sauce. Roll the pancake into a roll. Fill all the pancakes in the same way. Place them on a plate and pour over the rest of the sauce.
