Ramen with meat broth and instant noodles
A good beef broth is the basis of any soup, from a hearty solyanka to a spicy pho bo or ramen. Try adding it to a pasta sauce or while cooking grains for a side dish. It also makes an easy “hangover” version of instant noodles with the addition of meat, onions, and eggs. You can prepare the broth in advance by pouring it into ice cube trays and freezing until needed.

GETTING READY

Peel the onion and remove the skin from the ginger. Prepare a large saucepan, a couple of saucepans and a baking sheet covered with a sheet of foil.

Preheat the oven to 240°C. Brush the ribs and chicken wings with vegetable oil, place on a baking sheet and bake until dark golden brown. Remove and cool.Turn on convection mode during baking to get a golden brown crust.

Coarsely chop all the vegetables for the broth and brown in a dry frying pan until charred.For the broth, you will need only the green part of the leek. The white part will go into the soup. Do not peel the garlic, just cut it in half.

Place the baked ribs and wings in a saucepan and cover with water. Place on the fire, bring to a boil and reduce heat to low.All foam that appears on the surface of the broth must be removed, otherwise the broth will turn out cloudy.

Add onions, green leeks and garlic. Cook for 2 hours.

Season the broth with salt and sugar, add all the spices, add ginger and cook for another 40-60 minutes until the meat is soft.

Remove the broth from the heat and let it cool.

Strain the broth through cheesecloth or a sieve, and separate the meat into fibers. Boil the egg in boiling water for 10 minutes, then cool it and peel it.

Cut the white part of the leek into thin strips, the garlic clove into slices, and the green onion into thin rings. Remove the seeds from the chili pepper and cut into strips.

Pour sesame oil into a saucepan, add the white part of the leek, chili pepper and garlic. Fry lightly and pour in the broth. Add the spices from the instant noodle package and the noodles themselves. Cook over low heat until the noodles are cooked. Add the beef pulp.

Place the noodles in a bowl and pour in the broth.
