Sweet chili sauce is a hot seasoning known in many parts of Asia. It is prepared on the basis of chili pepper, vinegar, and sugar, due to which it acquires a new flavor shade - sweet and sour, which goes well with seafood, fish, and fried meat. In addition to the inhabitants of the East, the sauce is used by Europeans, and in Russia, it is used as a marinade or dressing for dishes to dilute their bland taste.

  • 5 pcs Chili pepper (75 g)
  • Bell pepper (95 g)
  • 3 cloves Garlic (15 g)
  • Water (200 g)
  • 3 tbsp White rice vinegar 4.2% (54 g)
  • 3 tbsp Cane sugar (75 g)
  • 1 tbsp Fish sauce (18 g)

    Wash, dry, and seed the chili peppers, using gloves to avoid burning your hands. Peel and wash the garlic. Rinse and seed the bell peppers. Prepare a meat grinder, saucepan, and blender. Wash and sterilize the jar or bottle to store the sauce.

    Prepare pepper purée. Grind prepared chili pepper and bell pepper together with garlic through a meat grinder to obtain a homogeneous mass.

    Cook the sauce. Transfer the finished mixture to a saucepan, add salt and sugar. Pour water and rice vinegar over the resulting mixture. Put the saucepan on high heat and cook the sauce for 10 minutes without covering. Then remove the mixture from the heat, beat it with a blender, and add the fish sauce. Put the mixture back on the heat and bring it to a boil.

Note

Fresh chili peppers should be brightly colored, firm, and have a slightly curved tip. If the peppers have been sitting for too long, they will be soft, wrinkled, and dull.
